Sam came home in a shrimp frenzy the other night. Having spent most of his lunch break scrolling through Smitten Kitchen, something shrimpy and pasta-y was calling his name. In his frenzy, he began emptying the fridge, crazed and wild eyed, searching for ingredients. In my mind, if you walk yourself into a real life Seinfeld situation, you are entitled to vast amounts of Costanza quoted in your general direction. Sadly, he didn't think my, "the ocean called...they're running out of shrimp" line was too cute. For the layfolk, here's the gist:
Jerk Store Pasta
3 C spinach
1 Tbsp olive oil
1 Tbsp butter
2 cloves garlic, minced
1/2 tsp paprika
pinch of salt and pepper
4 marinated artichoke hearts
1/2 lb. precooked shrimp
1/2 lb. whole wheat pasta, drained (reserve a splash of pasta water)
Heat olive oil and butter in pan over medium high heat. Stir in one clove of garlic and cook for about a minute. Add spinach, lower heat and cook until spinach is wilted and bright green. Add remaining garlic, paprika, salt, pepper, artichoke hearts, and shrimp. Sautee for 2 minutes. Add pasta, and stir in splash of pasta water. Sautee until all ingredients are heated evenly throughout.
